Banana Bread. There are so many recipes out there, and I’ve gotta say, I’ve never met a a banana bread I didn’t like. Personally, it’s one of my go-tos when I’m baking because you can easily change it up with different ingredients, allowing a great outlet for creativity followed by deliciousness! Because of this, I rarely make the same recipe twice, tweaking amounts of fats, whether it be the form of nut butter or coconut oil or something else, changing the amount of added sweetener I use, making it vegan or not, and adding a variety of different mix-ins! However, when I made this recipe, I was very glad I jotted down the measurements because this peanut butter oatmeal banana bread turned out pretty damn good. It’s definitely on my list of repeated recipes and I hope it will be for you too!

What’s in it?

This banana bread is vegan, has no added sugars or oils, and can be easily made gluten free! What’s in it you may ask then? Some great wholesome ingredients including extra ripe bananas, peanut butter, almond flour, oats (gluten free if necessary), protein powder, and some baking essentials. OH and how could I forget, chocolate chips! No banana bread is complete without them if you ask me.

Since this recipe has no extra sweeteners, I suggest using the ripest bananas you can. While waiting for the bananas to turn brown may test your patience, it results in the tastiest bread! If you are used to sweet banana bread you can also add 1/4 cup of sugar, but if you ask me this bread doesn’t need it!

This recipe features a flax egg to keep it vegan, but if you don’t have ground flax feel free to substitute with a normal egg. I also use protein powder in this recipe which I think gives it a great texture and added nutrient boost! But if you prefer you can replace it with an extra 1/4 cup of almond flour or oats.

What are you waiting for?

This banana bread is packed full of nutrients without the added sugars and fats, and most importantly it is DELICIOUS! Next time you have a few extra banana laying around, be sure to let them ripen and whip up the quick bread for you next dessert, breakfast, or anytime snack! I hope you give this recipe a try!
