It’s back to school time, which means SNACKS!! Being a student and a college athlete means that I’m always on the go, but also always need food on hand (#foodisfuel). Running between classes, mid day practices, prehab/rehab, and studying I can’t just run to the kitchen a put together a snack, but I need something I can have with me on hand! Instead I snack on whole pieces of fruit, bars made with real, whole ingredients (Lara bars, RX bars, kind bars, etc) , nut butter packets, pistachios/other nuts, energy balls (like my sweet potato energy balls), OR these Sweet Potato Banana ANYTIME cookies!
That’s right cookies.
These cookies are filled with wholesome, natural foods that make these breakfast healthy enough for breakfast, tasty enough for dessert, or perfect for any time in between!! Here’s a few ways to enjoy these little cookies:
Pair a couple with greek yogurt and some fruit for a quick and easy breakfast
Pack a couple in your bag and make your classmates or coworkers jealous when your snack is >>> theirs
Use as a pre-workout energy boost to get you going (did this yesterday!)
Satisfy the sweet tooth after dinner without the guilt
Real Ingredients, Simple Recipe
These cookies not only taste great, they are made with simple ingredients! Sweet potato, banana, and oats make up the majority of the cookies. Plus If you already have a cooked sweet potato these can whipped together in no time! If you do not have sweet potatoes or do not have time to cook a sweet potato before hand, you can also swap the sweet potato with more banana!
This recipe makes a smaller batch of cookies, but feel free to double the batch! Perfect for a big family or a big team of hungry athletes ;P These cookies also taste great from the freezer. Frozen or heated up you can’t go wrong. If you ~manage to~ not eat them all, throw them them in the freezer and pop one out in a few weeks when after you’ve forgotten all about them! Best Surprise Ever!

Sweet Potato Banana Anytime Cookies
These perfectly sweetened cookies are tasty enough to satisfy the sweet tooth, but healthy enough to eat for breakfast! That's why I call these anytime cookies:) Top a yogurt bowl for breakfast, pull one out for an afternoon pick-me-up, or an after dinner treat! And there's no eggs in the batter, so no worries if you snag a bite of of batter ;P
mix ins of choicedried fruit, chocolate chips, cocount, etc
Preheat oven to 350 degrees
Combine wet ingredients in a medium mixing bowl
Mix dry ingredients separately
Add dry ingredients into wet, and mix thoroughly
Fold in your fav mix ins
Scoop ~ 2 tbsp of mixture onto greased baking sheet and press down lightly
Bake for 12-15 minutes**
Let cool (or don't I wont tell) and Enjoy!
*If you don’t have quick oats, you can pulse a cup of rolled/old fashioned oats in a food processor**Cooking time will vary depending on the size of the cookies! Cook until edges are starting to golden/crisp
