Ultimate Peanut Butter Fudge Brownies

Valentine’s Day may have been last week, but any day is a good excuse to make brownies if you ask me! I’ve said it before and I’ll say it again, brownies are my favorite dessert. Chocolatey, fudgey goodness, I mean how can you pass that up?! I love a good boxed brownie or a giant fresh bakery brownie, but I also love a homemade brownie filled with ingredients you know and can control. I’m a big lover of chickpea brownies, and my pumpkin brownies I created in the fall will always have a special place in my heart (best ever?!). Recently, I wanted to make another brownie recipe using bananas and peanut butter. So now I give you these vegan, gluten free, and oh so delicious Ultimate Peanut Butter Fudge Brownies! If you’re #teamfudge when it comes to brownies, then this recipe has your name on it.


Real, wholesome ingredients

These brownies have 3 of my favorite things in life: Peanut Butter, bananas, and chocolate. Any combination is a winner in my book, and these might take the cake…i mean brownies;) These are also three foods I pretty much always have on hand, which means I (and You!) can make these anytime. The full ingredient break down looks like this:

  • Mashed Banana-Use ripe bananas for optimal sweetness
  • Peanut Butter-You want soupy or melty peanut butter to fully incorporate in the batter. I use natural peanut butter (just peanuts and salt), but you can also use peanut butter of your choosing, and create a soupy consistency by microwaving
  • Cocoa powder-I suggest using high quality, 100% cocoa or cacao if you prefer. The most decadent part!
  • Coconut sugar (or any granulated sugar)-because of the sweetness from the bananas, only 1/4 cup is needed!
  • Almond flour-keeps the brownies moist (and gluten free!)
  • Flax egg-yep, this recipe is vegan! I have not tested it, but a regular egg should work as well
  • Baking staples: vanilla, baking powder, baking soda, salt
  • Chocolate chips-optional…but not;) Add them on top before throwing them in the oven!

That’s it! No other added oils, flours, or sugars. With simple ingredient, and requiring only one bowl and less than an hour to make, you have no excuse not to give this recipe a try! The fudgiest brownies you didn’t know you needed are just 45 minutes away. I will say, if you’re patience allows, these brownies taste even better the next day!

Ultimate Peanut Butter Fudge Brownies

These vegan, gluten free brownies are made with bananas and peanut butter and other quality ingredients, resulting in the ultimate fudgy texture and decadent taste without the guilt!

Equipment

  • 8×8 brownie pan
  • Medium mixing bowl

Ingredients
  

Wet Ingredients

  • 2 mashed ripe bananas about 1 cup
  • 1 flax egg
  • 1/4 cup coconut sugar or brown sugar
  • 1/2 cup runny peanut butter *
  • 1/2 tsp pure vanilla

Dry Ingredients

  • 1/2 cup almond flour
  • 1/3 cup cocoa or cacao powder **
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Toppings (optional)

  • peanut butter for swirling
  • chocolate chips

Instructions
 

  • Make flax egg by combining 1 tbs of ground flax meal with 3 tablespoons of warm water and let sit for 5 minutes to congeal
  • Preheat the oven to 350 degrees and prepare brownie pan with parchment paper or grease
  • Mash bananas and add the rest of the wet ingredients in a mixing bowl.
  • Add in the dry ingredients and thoroughly mix. The batter will be thick
  • Pour batter into prepared baking pan, and spread evenly. If desired swirl in extra peanut butter on the top, and sprinkle with chocolate chips.
  • Bake for 30ish minutes
  • Let cool, slice, and enjoy! I personally think these taste even better the next day if you have the patience to wait!

Notes

* Runny, natural peanut butter is best, but if using a traditional peanut butter or a brand that is a thicker/solidified texture, melt the peanut butter in the microwave for ~30 seconds or until it is easily pourable/soupy consistency 
**For best results, use good quality 100% cocoa powder or cacao powder
